Its really just up to personal preferences. 3ds would have 3d where emulation doesn't. Then it's if you prefer the formfactor of the 3ds more than the deck. Its actually like, really fucking crazy, that the Deck is handling Switch emulation so well in its infancy for Deck spec. As in with the little time and effort those devs have managed to spend targeting Deck spec. Comparatively speaking even the Switch with an equal to Linux OS running similar emulation does not fair this well at all.
The most advanced PS3 emulator RPCS3 is open source and also has a Linux version. So the answer is yes - Steam Deck will run PS3 emulated games but some are not yet working with the emulator. According to RCPS3 wiki first Dark Souls is not fully playable but Demon Souls is. PC ports of Souls games should work fine.

You're going to want to do some googling and maybe join some discords about emulation to ask questions, but they're out there.And the Deck will never be powerfull enough to emulate a ps4, not even in 10 years when PS4 emulation will finally (maybe) be on point. Emulation requires way more resources than the original system that played the game. Just look at switch emulation. It has to emulate the hardware to appear to be the original system.When you change the boot options, you must fully exit the game and retroarch. Then go back in again.
